Meatless eggplant balls! I’ve been so into making meatless “meat” balls lately because I’m really not a fan of meatballs. Idk what it is about them I don’t like, sometimes ground meat freaks me out but I like tacos and burgers so I don’t make sense lol. But meatballs just ain’t for me. I LOVE eggplant so this was absolutely perfect for me. The Panko breadcrumbs on the outside gave these the perfect texture.
